Gimme the Granola

This is my go to granola for snacking or mixing with high protein Siggi's yogurt.

  • 1 cup old fashioned rolled oats (can use gluten free oats)

  • 1 cup pecans roughly chopped

  • 10 dates finely chopped

  • ½ cup pumpkin seeds

  • 2 teaspoons cinnamon

  • 1 teaspoon sea salt

  • 1.5 tablespoons maple syrup

  • 1.5 tablespoons olive oil

  • 2.5 tablespoons local honey

  • 2.5 tablespoons coconut oil, melted

Pre-heat oven to 350°F. Mix all ingredients together in a bowl with a fork and mash until well mixed. Spread in the bottom of a parchment lined jelly roll pan (approx 9.5 x 13 inches). Cover pan with tin foil to avoid burning granola. Bake for about 30 minutes. Let pan cool. Break up granola with your hands however you like your granola (I like to leave some big chunks). Store in airtight container in refrigerator.
